Mary Cassatt was an American painter and printmaker. At 15 she began training at The Pennsylvania Academy of the Fine Arts. In 1865, impatient with their restrictive and patronizing policies towards female students, she left to study abroad, settling in Paris.
There, Edgar Degas invited her to join the Impressionists. “I accepted with joy, I took leave of conventional art. I began to live.”, she said.

For a contrast, you can compare our sea salt to say Maldon Salt or Jacobson Salt-both of which are amazing, beautiful flaky salts. Our sea salt is not flakey, it is more granular, and that's because it's very difficult to produce flaky sea salt by solar evaporation which we use. Jacobsen Salt and Maldon Salt are able to produce their salts by boiling seawater which allows them to control the crystallization, the downside being it's much more energy intensive than our method.
Similar in consistency and minerality to Celtic sea salt.

Making your own fresh pizza is very easy with this Italian pizza flour. This flour for fresh pizza contains strong wheat proteins (gluten) from durum wheat. As a result, the flour absorbs a lot of water, which ensures that the dough is stronger and can therefore rise longer. The result is a wonderfully airy and tasty pizza base, ready to be sprinkled with the most delicious ingredients. How to use Make the pizza dough with flour, a teaspoon of salt, half a teaspoon of sugar, seven grams of dried yeast, and 250 to 300 milliliters of lukewarm water. Let the pizza dough rest for an hour and a half under a damp tea towel, after which it can be rolled out into the desired shape. The Pacific Madrona (Arbutus menziesii) is a beautiful native tree that grows along our rocky slopes and in forest clearings. Its exceptionally hard wood is the perfect ingredient for cold smoking this organic cane sugar over two days.
Due to the delicate nature of this smoked product, we find it keeps its flavor best when used as a finishing sugar. The smokey taste tends to shine through most strongly when the sugar hasn't been exposed to high temperatures. We don't recommend baking with this sugar as its aromas tend to cook out. However, the smokey flavor seems to shine through well in hot coffee, heated into a simple syrup and added at the last minute to sauces.
Also use our smoked sugar for deepening the flavor of dressings, cocktails or for sprinkling a dash of magic on desserts. It's amazing when added to mixed berries, sprinkled on oatmeal or when tossed with roasted, buttered yams.
