El Paraiso was devastated by leaf rust a decade ago. However, while
the farms were collapsing, the producers remained optimistic and
proud. Molinos de Honduras, our team in Honduras, describes
them as “shining as brightly as their coffees” and absolutely
determined to make El Paraiso a must-have for specialty coffee
roasters.

The coffees of El Paraiso feature beautiful floral notes and delicate
acidities, as well as a touch of dark chocolate. Our team created this
lot to showcase sparkling, bright, fresh flavors.

ABOUT THIS COFFEE
This coffee comes from a single estate, Fazenda Riacho Doce (or
“sweet water stream”) on the Vitoria da Conquista plateau, in the
town of Barra do Choca, in the state of Bahia.
Ripe cherry was harvested during the day and taken to the
washing station on the farm at the end of the afternoon, where it
was de-pulped and left to rest in fermentation tanks for 12–15
hours. (In Brazil, washed coffees that undergo this fermentation
step are referred to as "fully washed.") After fermentation, the
beans were washed and sent to slowly dry in greenhouses.

The Western Region of Honduras is dedicated to coffee
farming. The region’s producers have a tradition of wet
milling their coffee and drying it on patios on their own
farms. This individual process gives our helps give
Pacavita its unique characteristics.

PRODUCER NOTES
Previous iterations of Pacavita came from two large,
individual producers (Joel and Silvestre) from the
Western Region. This year we opened up our Pacavita
coffee and allowed more small farms to contribute. We
included new producers from the Intibuca/Lempira
departments. Ultimately this coffee will help these
small farmers earn more and gain access to a stronger
supply chain.

Our Hambela Guji comes from the Hambela Washing
Station in the Guji region of Ethiopia. Hambela
operates a coffee plantation and partners with more
than 1000 farmers to source coffee. They are
committed to working with the local farmers to
improve quality and productivity.
Hambela has been supplying coffee to the auction for
over 20 years, but was only established as a coffee
exporter in 2014. They own 3 washing stations: two in
Guracho village and one in Hambela District.

The Guji region is named for one of the tribes of the
Oromo and is one of the administrative zones of the
Oromia region. The zone was created in 2002 when the
uplands of Borena zone were split to create it.

Colombia is a land of extremes. With vast rain forests, sprawling savannas, huge
mountains, and 2,900 kilometers of coastline on two oceans, this equatorial country
is one of the most biologically diverse places on Earth. Colombia’s incredible variety of
microclimates allows it to produce a significant volume of premium washed Arabica
every month of the year.

The highest-grown Colombian coffee is cultivated in Nariño, a small region bordering
Ecuador and the Pacific Ocean. Coffee from these slopes is well-balanced, with high acidity,
medium body and a lingering citric sweetness.

Because it is just one degree north of the Equator, coffee can be
cultivated at extreme altitudes (up to 2,300 meters ASL) in Nariño.

Haitian cacao and coffee all rolled up into a single bar- sweetened with honey, of course! This 75% Dark Chocolate features cacao from Haiti PISA and Brew for Impact coffee from Haiti farmers, as well (roasted by Kaldis’s). The proceeds for this coffee go towards building and purchasing homes in Haiti and North Saint Louis.

Haiti PISA launched their centralized processing facility in 2014, which was a revolutionary change for the way the cacao industry worked in Haiti, offering the first high quality Haitian cacao to the US market. Through private sector innovation, PISA partnered with farmers to give them what they really needed: pricing transparency, a consistent market, and an elimination of risk. (uncommoncacao.org)

Our honeycomb currently comes from hives in Georgia from Pure Southern Honey. Bees pollinate primarily on Gallberry, Tupelo, Blackgum, and Palmetto.

All cacao used is transparently sourced at a $2.20/kg farmgate price point from the PISA co-operative in Haiti.

This Honeycomb is great for cheese boards. Each serving comes with 4.2oz. of product and has a two-year shelf life. We use only home compostable packaging with this product. Raw honey should not be fed to infants under the age of one.
