I used to make a vegetarian Mexican lasagna with this  recipe and then one day when I was out of ideas for new empanadas I came across it and said "Why Not?" Now it's one of my number one vegetarian options.  Cheddar, Monterey Jack and cream cheese blended with Papi's adobo and kicked up with a hint of chipotles in adobo. It's quite sublime.
