The perfect mulled wine spice blend and a bottle of wine! 

What you'll need from home: 
- 1 orange
- sweetner of choice (honey, agave, sugar, etc.) 
- option splash of brandy

Combine ingredients.  Add wine, orange slices, cloves, cinnamon, star anise, 2 tablespoons sweetener, and brandy to a large saucepan.  Stir briefly to combine.
Simmer.  Cook the mulled wine on medium-high heat until it just barely reaches a simmer.  (Avoid letting it bubble — you don’t want to boil off the alcohol.)  Reduce heat to low, cover, and let the wine simmer for at least 15 minutes or up to 3 hours.

Strain. Using a fine mesh strainer, remove and discard the orange slices, cloves, cinnamon sticks, and star anise.  Give the mulled wine a taste, and stir in extra sweetener if needed. Serve warm in heatproof mugs, topped with your favorite garnishes.

Overground rather than Underground because the wines in this collection are a tad less ‘out there’ than the Barrel-less Tannat and Elisa’s Dreams Tannat, both of which are a bit bonkers. The winemaking is relatively conventional, but the wines are far from boring. Must maceration takes place in small stainless steel tanks for about five days, capturing the fresh fruit aromas and flavours, with a combination of lots in wild-only and selected yeasts. Pumping over and punching down is undertaken by hand and after fermentation, pressing, settling and racking, the wine is moved into second use barrels, mainly French with a few American, for about 6 months. The wine is very lightly filtered prior to bottling and retains the wonderful, dark energy so cherished when Tannat is at its best. Tasting Notes: Smoke, plum, spice. Pairing Notes: Tannat has the highest level of antioxidants of any red wine. So consider this a health food and pair with your New Year’s resolution to eat better! Location: Canelones, Uruguay. While production is small by industry standards, the number of wines is extensive. This small lot principle enables Odonata to focus on consistent high-quality instead of high-volume. This Petite Sirah is a beautiful inky red, bold, and dry. Full-bodied and complex, it has dark fruit aromas and a warm whip-crack of pepper. Tasting Notes: Plum, eucalyptus, cherry. Taming the tannins and producing soft, juicy, approachable wines such as this one is no easy task but in the right hands — Gabriel Pisano’s in this case — and with beautifully ripened fruit, Tannat doesn't require a knife and fork to unveil its lovely dark secrets. This wine is part of the modern Uruguayan wine revolution; delicious upon release but happy to sit quietly in a cupboard for five years. Tasting Notes: Blackberry, raspberry, smoke. Iole benefits from inheriting her family’s small vineyard and olive grove both of which are soils that have never been treated with chemicals.
